Hey y’all here’s another yummy recipe from me lol!!! I don’t usually like blueberries and I love these soooo…also if you have a gluten allergy like me, you can replace the flour with Gluten Free Baking Flour(make sure its the one that says for muffins, cakes, ect…(or in other words the one with out most of the bean flours). Alright onto the recipe!!!!
- 4 cups all-purpose White Flour
- 1 1/2 cups white Sugar
- 4 tsp. Baking Powder
- 1 tsp. Salt
- 2 eggs
- 1/2 cup Olive oil
- 2 cups water
- 2 cups blueberries
Preheat oven to 400 degrees F.
Combine the flour, sugar, baking powder, and salt in a medium sized bowl. Whisk until mixed.
In a smaller bowl, whisk the eggs until mixed, add water and oil.
Add wet ingredients to dry ingredient bowl and mixed thoroughly. Add blueberries and mixed it with a spatula or wooden spoon.
Take 2, dozen muffin pans. Spray with oil or put in cupcake cups. Pour in batter until about 3/4 filled.
Bake in oven for 25-30 minutes. Or until comes out clean with a toothpick. Let cool 5 minutes before eating them or you can let them sit till they are completely cooled. (They taste good either way.)
